It's just sooo good. The bitter from the chocolate, the sweet and tart from the fruit, breathy lightness from cake and fresh cream... It's just sooo good! Also, using unadulterated ingredients like chocolate and fruit lend a pure, natural quality to your event.

-here, the white chocolate has a little syrup added to make it malleable and wrapped around the sides of the cake. It makes a nice little basket to hold the berries on the cake:
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 267px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh4QzumKSQHhJdsCXvNbg0WY8-CKuFDO5jJ23ZihWxP7RRgeMbTKsjZ7MkdlBC_qQi418DiWKDgrheHISzK2sz14ii9UbFWYEED4fN8aZnefECE0xu9NfjI5QtFeJxj75GQp3QiRZk0C8Wo/s400/Emma_Haddix.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5732231349785785602" />
-never underestimate the power of a few well places chocolate shavings:
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 267px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhvSm94TSoSPrf8wECemuG83HTJOeGpy1vlNG-yS5NuqCBabzoJIFtyZuIqX-C26XHzRr78_WafJRHxtdGgQY1cjLtgSPkqbIUtATEk-ki5xyyZvHmKqRAWFtfxHdjn5mFSz_oty6stANBt/s400/cake-June09-0010.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5732231359762238738" />
-oh berry coule folded into chocolate ganache dusted with cocoa powder, how I love thee...
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 267px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg_gKaaZ1XsvOD7PEEKY63-efSbz2tLMJzxa8LPoz3wKEtEGipRFkV2BB-XE0-8hWFHSyZHYI-a8jI3XKc11ORqf1HGRRkDeidopc0zKppFso5-icwCiW_w3_Zaxsw0lRXURc_XfmP2ymik/s400/Reverse_Shell.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5732231358579597922" />
-this is another take on the chocolate basket...piped to make it look like lace:
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 241px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiS6g_KFCAi9wb5NAukeAdGqp124JDmviG4iPB9XBzQgz9OfUlVXd-RTPWdPCnyOg9naSN6uTN6OdMfhAdBoMXyFIbfpiGlybHq0p0d6SUKtco9kLrDD3LYA5wBZmi1UyhfX8_oLeHp7ou8/s400/P7200225.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5732231357612425250" />
-warm ganache dripped over the edge...great for an event with chocolate or champagne fountains:
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 257px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjoqmWrt0n0gjnBLdn1dehFRA970i8rAW7S2CFepru4xOGJ6t2ncgCX28k9Ss1b4LFyPcYdBO0nFGWkVrCMDN5wmXfvZsuTCPmdRUpzkMxlzee220t547-9_kiqRwo6JgAXGndqnXT4hNGR/s400/Drip_Cake.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5732231349411838898" />Karrenhttp://www.blogger.com/profile/08079604404512799466noreply@blogger.com2tag:blogger.com,1999:blog-8064999257236084951.post-51335985879866323772012-04-16T21:42:00.002-07:002012-04-16T21:56:58.504-07:00Oh, the fondant controversy...So yes, fondant is not the silky, creamy frosting that we all crave with cake. BUT, there are soooooo many advantages! It doesn't melt in the middle of your summer wedding. Fondant can be dyed any color, and spread in a thin layer on your cake; no unfortunate red or green smiles in the wedding photos. The finish of a fondant cake is very smooth, so there's no need for frosting or ribbon borders to hide flaws. Finally, your cake can stay fresher longer- fondant can seal up the moisture of the cake, so leftovers can still taste good after the honeymoon!

-with this chocolate fondant cake, I was able to use edible gold paint to make vines and flowers to match:
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEinCtvHGsVJ9NG8rF9GGpkAmPsgdsWN4hOy0bE6gCJ6emfzTcXIYZa92bmsuaVNDLr2toK-tBfS57YAbh7T5U_OcnAa3nNPIr6R_h2yCeraC0Lg7BJ622zk3V6TvGVdUHnMZ7AWLdUe4aNJ/s400/P7280263.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5732226033738881954" />
-here, I could use an edible pearl dust and white chocolate to create a 3-D leaf design:
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 267px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjx8b9YJw_zsPn0Bqp6tNMkbZ9JgUARP2VGo4bmlzwo0gAe-k5S6qqOzhgCLDmVtISuYZ9l2CpAsJW0WpqK7r8zqJq8Dfc6jE526piwpysYC6YFPVR4mqYbvhes21hCFd7kJ6As2AwMxS1r/s400/PB100017.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5732226040796179650" />
-you can give an antique feel to the cake by adding shadows with different edible spray paints:
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 266px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhRCRpB00PBFpuZxvJhkekUnuQw3WYCp5Oc5b-FbuTcYtMYORxD8cA42qfqsSoMfly-S7_GyjcdTRQTei932kBwBKVxFI9Eo6H21DTXEO47myWajHW-DjA74PVafVHZgIfycvsZ5S1ycG5V/s400/DSC_0001.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5732226050838020818" />Karrenhttp://www.blogger.com/profile/08079604404512799466noreply@blogger.com0tag:blogger.com,1999:blog-8064999257236084951.post-74004812873006942012012-04-16T21:30:00.002-07:002012-04-16T21:42:03.676-07:00Then there's fresh flower cakes....These types of cakes tend to be very simple to allow the flowers to take all the glory. We went crazy with the theme of a Mad Hatter 'super-girly' tea party. WhenI had the business, I was often asked to provide gluten/dairy/or egg-free desserts. I don't particularly enjoy using cake-y substitutes for flour and dairy like 'garbanzo starch' or 'soy silky dream'...they never quite taste like the thing they're pretending to be. Instead, it is fun to make a 'safe food' cleverly disguised to look like festive birthday fare.

This little cupcake is made out of jello. Saturday, we had a baby shower for a friend with a great sense of humor. We constructed a replica of her Boxer, Libby. Libby is very excited to assist in the nurturing of the new little arrival.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiHDPVYK7yt5_eaBaojYyut9ChklQLmBELGDd3oU7DJdurX-EPVDat1IDFn5YotyLve_VOagpt502jx3WxiWAlbLfQ4Ru3RcKUXhd5fH2VWFZ9CflZ8t8hMWp1mRoHM1b8wTjGzo4GeSbJ9/s400/DSC_0104.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5573627865877854626" />
I have included a couple of pictures to give you an idea of how this cake was made. The basic shape of the cake began with a stack of 6" hearts on the bottom, followed by 8" ovals, and the neck used 3 1/2" rounds. The head was constructed using foam balls and modeling chocolate (this cake needed to be kosher for religious reasons, so the typical medium of rice cereal and marshmallows could not be used)

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 266px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiNkPhVwWnUmcsobgtMRZ4biorYyuGQhyphenhyphentm3AIwAA1bax9RbqayRKkZf9M7YSJtfphO_Ld3zap67aHaadGXRjVrOoCR_uPJwDKTdIJT0tRmKc6YSFD8ruBWy2TajFZ6k-L24IMbi5GmHbcV/s400/DSC_0003.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5573627857306894914" />
Now that I am not baking for the general public, Sonya is allowed in the kitchen to watch.
The cake is covered in "stucko" after carving, which is a mixture of mousseline buttercream, filling, and cake crumbs. It allows for a smoother surface to ice.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjq3la9bUU3xxzSLqZF5ubtTN6MrwERty3qZ1Gx-QdpJ_3NyfnpHEznsHOL2L6dpV0WZ_Yik3jN6ja6KUN0QLJjHNxCV4C3jeIAQ3xq6_EhyphenhyphenxR75lK7eEggi80Wd-MfeAVBwnavHf609pD9/s400/DSC_0009.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5573627852446744674" />
The next step is a thick and very smooth layer of ganache. This will be one of only a few remaining cake posts, as we will be discontinuing our business. Sadly, due to health reasons, we have decided to discontinue our business. We will miss interacting with the community and participating in the special events of your lives. There are many qualified bakers who have arrived in the Portland area since we opened shop. They should be a great resource to you. One in particular is Artisan Cake Company whose business model most closely mirrors that of Karren's Specialty Cakes. Once again, thank you for all the business and loyalty!Anonymoushttp://www.blogger.com/profile/12855479448369366652noreply@blogger.com0tag:blogger.com,1999:blog-8064999257236084951.post-50321615280953893742010-07-23T20:24:00.000-07:002010-07-23T20:25:46.456-07:00Can you name the movie?What movie is the cake based on?
The cake delivery revealed a that home was FILLED with candy of every conceivable type and color. There was enough sugary stuff to make an entire middle school sick, but a mere 15 young girls were given the task! How they were able to save room for cake, I may never know! (I was informed that a toothbrush was included with every goody-bag:-)
